Raspberry Cider

(June 1997)

Amount Ingredient
5 pkg 16 fl.oz. Safeway Apple Juice (1/2 gal)
2 pkg 12 fl.oz. Welch's Apple Grape Cherry Cocktail
8 pkg 12 fl.oz. Seneca Raspberry Cranberry Cocktail
1 pkg 4oz Raspberry Flavoring
1 pkg Vintner's Choice Champagne Yeast #3021 (liquid)
2 tsp Yeast Energizer
1 lb Yeast Nutrient

Here are my (rough) brewing notes:

  • Yeast broken early. I don't intend for it to get started properly.
  • Boil 1 gal water
  • Add apple juice
  • Heat a second gallong of water to 160F
    • Add to mix (I don't know why I did this... probably an oversight)
  • Add the rest of the juice plus 1.5 gal cold water
  • Add flavor, nutrients, energizer
  • Pitched at 90F (too hot!)

This cider was awesome! I must try it again... though maybe with better ingredients. Or was this the batch that turned into vinegar? Damn, I don't know.
